DI’S FLOP PROOF MERINGUES
These meringues are made totally different to your traditional recipe.
Many years ago a friend of mine gave me this recipe & I've never looked back. With only 1 egg white you manage to make 2 baking trays of meringues. WOW!!! Who wouldn't want that!

- 200 gr Castor Sugar or 1 packet of any flavor of your choice of jelly topped up with castor sugar until you have 200 gr in total.
- 50 ml Boiling Water
- 5 ml Vanilla Essence
- 10 ml Vinegar
- 1 X-tra Large Egg White
- 5 ml Baking Powder
- 100's & 1000's
METHOD:
- Preheat your oven @ 90°C
- Combine your egg white, sugar, essence, vinegar & water in your stand mixer bowl.
- Beat it for ± 5 min. or until very stiff.
- Fold in baking powder and scrape into your piping bag.
- You can be creative like I did mine & just paint with any food color 4 stripes within (inside) your piping bag from top to bottom and then place your meringue mixture into your piping bag.
- Pipe onto your silicon baking mat which is on your baking tray
- I always like to decorate mine with 100's & 1000's (habit)
- Bake for 1 hour then switch of the oven and leave until cooled
- Store in an airtight container.
