While living in Ecuador I met my best friends Marcelo & Liliana which were originally from Argentina (now living in Canada). They knew I loved baking & they introduced me to some delicious traditional dishes from Argentina which I loved eating.
Anyway, the one day they phoned me up & said they are on their way to come and pick me up as we were going to make a famous treat from Argentina. So, of we went to their house to make these absolutely lovely sticky treats.
They do take allot of time to make but they are sooooo worth it!!!

DOUGH:
- 600gr Flour
- 15gr Salt
- 270gr Water
- 120gr real butter (melted)
- 100gr real butter
- Corn flour mixed with flour for sprinkling
- Guava paste (you find it in a tin; it has a firm texture)
- Oil for frying
SYRUP:
- 400gr sugar
- 200gr water
- 50gr honey
METHOD:
- Combine flour, salt, 120gr butter & water
- Knead & leave your dough to rest for 15min
- Roll out into a square. About 5mm thick
- Smear 2/3 of your dough with butter (sprinkle with flour on each fold) & fold the un-greased over onto the part which has butter & fold over the other part on top. (like you make puff pastry)
- Roll out long
- Then smear butter on your center part, fold both ends to the center so that you have closed your butter.
- Refrigerate for 30 min
- Prepare syrup by combining everything together & boil to 80˚C
- Let your syrup then cool down.
- Roll out 0.5mm thick & cut 7x7 cm blocks
- Cut your guava into 1 cm square blocks
- Place your guava square in the center of a square dough piece.
- Place then another dough square on top & press against the guava to seal your guava properly & pressing out the air.
- Take a chop stick or the back of your wooden spoon & press your dough in the center then pinch at the bottom & press towards the guava block
- Fry @ 120˚C until crispy & remove
- Increase the heat of your fryer to 170C
- Fry then @ 170˚C until golden brown
- Dip into syrup & leave to drip
- Sprinkle with 1000’s
- I prefer them when they are still slightly warm but everybody else loves them the next day.
