COCOATS BISCUITS
INGREDIENTS:
METHOD:
PS. This dough can be frozen. I just simply roll it out into a sausage shape on top of your plastic wrap & close it up. Remove your dough from your freezer & cut it into slices & bake them.
- 2 cups Sugar
- 250gr Butter
- 2 eggs
- 2 tbsp heaped peanut butter
- 1 tsp vanilla essence
- 2 tsp bicarbonate of soda
- 1 tbsp milk
- Pinch of salt
- 2 cups Post toasties (cornflakes/rice krispies etc.)
- 2 cups flour
- 2 cups coconut
- 1/2 cup chocolate chips (optional)
- 1/2 tsp spekulaas kruiden (optional)
METHOD:
- All your ingredients must be at room temperature
- Cream your sugar & butter in your stand mixer.
- Add your eggs 1 X 1 to your butter mixture & combine into a creamy mixture
- Add the peanut butter & beat it until combined
- Combine separately in a mug your milk, bicarbs & vanilla essence together
- Mix it into your mixture & add the rest of your ingredients.
- Mix until everything is combined
- Preheat your oven @ 180¯C
- Now you make grape size balls & place them on your silicon mat which is on a baking sheet.
- Bake them for 12min
- Remove from your oven & leave them to cool on your tray for 5min, thereafter you transfer them to a cooling rack.
- Voila!!! It is that simple & so delicious.
- If you make your biscuits without chocolate chips then you can sandwich them with chocolate
