BUCKWHEAT BREAD
I was invited by the ladies of the community to go & see how they prepare their breads in their bakers oven using wood. It is similar to a pizza oven.
It was such a awesome experience & it is such a pity that this trade is being lost due to mass production.
It takes a lot of time and work to prepare the oven and therefore when they make bread they need to make at least 9 breads or rather to say the oven needs to be full.
I love their breads because they are so light & chewy.
I was always under the impression that one had to make bread with either sourdough, levain or starter to have these artisan breads.
Well, nothing could be further from the truth.
These artisan breads are mixed proofed & baked within 2-3 hours.
Not too bad! And yes, I know what you are thinking. "But it is baked in the bakers oven". Well, you can bake these artisan breads in your electric oven. So now you can also have the benefit of making these lovely artisan breads.
I would just like to mention that you have to use the best flour available on the market. Don't go for your cheap flours from your local supermarkets. Rather go to your mill or use well renowned brands.

BUCKWHEAT BREAD WITH WALNUTS
INGREDIENTS
300gr buckwheat flour
600 gr white flour
42gr yeast
1 tbsp sugar
1 tbsp salt
40 ml oil
±800ml water/milk (I use water)
3 fists of walnuts
METHOD:
1. Make a paste with your Buckwheat flour by boiling 500ml water & then mixing it into a paste
2. Leave it to cool a little
3. Preheat your oven to 180°C with a baking stone
4. Combine your yeast, sugar & 1 tbsp white flour with a little bit of lukewarm water
5. Stir & leave to froth
6. Combine your cake flour with your salt. Give it a good stir so that your salt is equally distributed with your flour
7. Add your buckwheat paste to your flour mixture
8. Mix your paste & flour until it looks like breadcrumbs
9. Add your yeast, oil and ±300ml lukewarm water or milk
10.Then add in your walnuts & shape
11. Be very gentle with the dough when shaping it as it is a sticky dough. (You have to watch the video in order to see how these ladies shape their breads).
12. Leave to rise for 60 min.
13. Re-shape your dough & form a loaf
14. Place it in your prepared floured basket. Sprinkle flour on top of your dough and close it with your floured cloth.
15. Leave your dough to rise again for another 30 min.
16. Tip your dough now gently onto your hot baking stone.
17. Bake for 45 min @ 180°C
